Life has been super busy for us lately and we have had to be very frugal with our budget. I knocked together a great filo tart last weekend and we really enjoyed this recipe.
I purchased an easy roll filo pastry (yes i am a cheater) and rolled it flat. Smothered the base in tomato puree followed by chunks of Mozzarella. I then sliced two big, juicy organic tomatoes and layered them across the cheese. Next up i added some rocket leaves.
Baked in the oven for 10 minutes on 150c and presented my family with a golden crust of filo pastry topped with fresh ingredients and drizzled with extra virgin olive oil.
