Summer is officially here but hey this is England and today has been chilly out.
We are on a budget this week so i have dared myself to be both frugal and creative with our meals.
A good sausage stew (or was it a casserole) set us back at around £1.50 per head and fed three with a portion left over. I love to throw a mismatch of ingredients into a pot and see how it tastes. The finished meal was a winner served with mountains of mash and a wedge of bread drizzled in real salted English butter. Hmmm.
Cook this meal in a casserole dish or pan that can be used in the oven.
Four thick pork sausages
One red onion
One clove of garlic
Splash of vinaigrette
Splash of red wine
Brown the sausages and add the chopped onion and Garlic.
Remove sausages from pan and cut into chunks.
Return sausages to pan , add chopped carrots, vinaigrette and red wine.
The ingredients should now be soaking in a small pool of juices. Now is a good time to sprinkle an oxo cube on top.
Cook slowly in oven for around 45 mins 160’c
