Our toddler is crazy for eggs. She loves them however they come and we always make a point of having our eggs together for breakfast on a Sunday morning.
However we do not just have eggs for breakfast, we eat them for lunch and dinner too! After a busy day there are lots of different ingredients you can use in an omelette and equally lots of different ingredients to add to scrambled eggs.
When the toddler goes to bed at 7pm we sometimes rustle up an omelette for dinner. After a long day the recipe is quick and easy and only takes a few minutes. Here’s our adult version omelette!
BASIC OMELETTE RECIPE
Crack the eggs into a mixing bowl with a pinch of salt and pepper. Beat well with a fork.
Put a small frying pan on a low heat and let it get hot. Add a small knob of butter. When the butter has melted and is bubbling, add your eggs and move the pan around to spread them out evenly. When the omelette begins to cook and firm up, but still has a little raw egg on top, sprinkle over the cheese, if using (I sometimes grate mine directly on to the omelette).
Using a spatula, ease around the edges of the omelette, then fold it over in half. When it starts to turn golden brown underneath, remove the pan from the heat and slide the omelette on to a plate.

The flavors from these ingredients make a great omelette and are very filling for a main meal using Lions eggs of course.
