½ Organic stock cube (No Salt variety)
1 small floret of Broccoli
2 small Apples
WASH, PEEL AND CHOP EVERYTHING! Chicken is an ideal first protein for babies as it is easy to digest. Chicken is packed with all the essential amino acids your baby needs for her growth and development. Olivia loves this recipe and as she is still only 7 months old I puree the contents when cooked. Personally I always give her a main meal around 2pm as then she has time to let everything digest properly. And then something light for tea at 5.30pm. Putting a baby to bed on a full stomach will just cause him/her to have discomfort during the night. Slice the chicken into small cubes and place in a casserole dish. Sprinkle a small amount of your stock cube over the meat.
Throw in the rest of your vegetables including the lentils and pour over freshly boiled water so it just covers all the food. Leave in oven for 1 hour gas mark 180 stirring occasionally. When cooked leave to cool and then transfer to food processor. We got our processor from kiddicare.com. It is small, compact and does the job. Mash up the food first then add some of the casserole water for thinning. Whizz and blend until the puree is a suitable consistency for your baby. Transfer to pots or an ice cube tray with a clean spatula or spoon and remember to label and date everything. Chicken casserole can be stored in the fridge for just a few days but in the freezer for a few months.
